Directions

All the flavors and spices in this soup combine beautifully to offer a true taste of Thailand.

You can make this as mild or as spicy as you wish.

Omit all the chilies if you want or add more.

You can also add different vegetables.

In Thailand they use chicken feet, blood and even organ meat to add flavor to the dish and also use up all the parts of the bird.

We just like to use chicken breast, or you could use chicken thighs if you prefer.

Melt the coconut oil in a pot, then add the ginger, garlic and green onions.

Cook for 5 minutes or until tender.

Now add the mushrooms, carrot, bell pepper and jalapeno.

Throw in a few more chilies if you want, depending on how hot you want it.

Cook for 3 minutes.

Stir in the coconut milk, chicken stock and chicken breasts.

Stir in the fresh tomato and fish sauce then bring the soup to a boil.

Turn down the heat and simmer for 18 minutes or until the chicken is cooked through.

Remove the chicken from the pot, shred it and return it to the pot.

Stir in the lime zest and basil, along with salt and pepper to taste.
