Tandoori Lemon Marinated Chicken Tikka

This yummy Indian recipe is sometimes served in a tomato-based sauce, making it into chicken tikka masala. Here though we are using authentic Indian seasonings to flavor the chicken, then giving it time to marinate before baking.

We are using chicken breast here but if you want to use chicken thighs, leg quarters or even wings, that is fine. You might need to adjust the cooking time a bit – as soon as the chicken is 165 degrees F inside when checked with an instant-read thermometer, it is done.

Tandoori powder, coconut milk, garlic, lemon and cilantro combine to make the delicious marinade, which may be left on for anywhere between 1 and 12 hours. Typically natural yogurt is used in place of the coconut milk but if you’re strict about avoiding dairy, go ahead and use the coconut milk. Bake the chicken tikka in the oven until done, then serve with lemon wedges and perhaps a green salad or some steamed vegetables.

If the weather is good, you might want to cook these on the grill instead of in the oven. We like to finish them off under the broiler or in a griddle pan to char the outside a little, but you can omit that if you want.

Serve the finished chicken tikka with lemon slices, cucumber slices, chopped fresh tomato or anything else you want to have.

This recipe is best served immediately, but leftovers will keep for several days and can be used as part of a soup, salad or other entree.

Stir the tandoori powder with the coconut milk, lemon juice, cilantro and garlic in a glass dish. If you don't have a glass dish you can use a re-sealable bag.

Add the chicken and toss to coat.

Marinate in the refrigerator for between 1 and 12 hours.

Now preheat the oven to 400 degrees F.

Arrange the chicken pieces on a greased baking sheet.

Discard the marinade.

Cook in the oven for 10 minutes.

Flip the chicken pieces over and cook for a further 15 minutes or until 165 degrees F in the center.

Now you can finish them off under the broiler or in a griddle pan (or on the grill) to char the outside a little. This is optional but those char marks really do look appealing!
