This is the perfect paleo dinner recipe and it is easy to make.

Roast chicken never fails to delight, especially when it’s homemade and you are using garlic and herbs to add incredible flavor.

You might like to add some carrots and onions to the roasting tray during the final half an hour or you can steam or simmer vegetables on the stove if you prefer.

You will need a whole chicken to make this, weighing between three and four pounds.

You will also need fresh thyme, garlic and some lemon wedges to add extra flavor.

Some people like to add other ingredients to the chicken to further enhance the taste, such as sage, rosemary, onion or shallots. Go ahead and add any of those that you want.

You can use these ingredients to stuff the cavity.

Preheat the oven to 450 degrees F.

Pat the chicken dry.

Grind plenty of salt over the chicken. Add the pepper and thyme leaves too.

Turn the bird over and add more salt inside the cavity, along with the garlic, thyme stalks and lemon wedges.

Put the chicken in a roasting pan and roast for 45 minutes.

Remove the chicken from the oven.

Cut into where the body meets the thigh - if juices run out the chicken is done. If not, give it 10 minutes more then check again, and repeat if necessary.

Let the roast chicken sit on a cutting board for 10 or 15 minutes, then carve and enjoy.
