If you are looking for filling paleo diet recipes for dinner, look no further.  Chicken cacciatore is the one of the easiest paleo chicken recipes you’ll ever make.

This classic Italian dish is made with chicken breast and thighs, tomatoes, garlic, vegetables, capers and oregano. You can also add red wine if you like, although that is optional.

Try this chicken cacciatore with cauliflower rice (grated cauliflower sautéed in olive or coconut oil until tender) or a fresh green salad.

Heat the olive oil in a skillet, then add the chicken and sauté for 5 minutes per side or until brown.

Transfer the chicken into a bowl.

Now put the onion, bell pepper and garlic in the same skillet and sauté for 5 minutes.

Pour in the red wine and cook until the mixture is reduced by half, then add the tomatoes and juice, capers, bouillon, basil and oregano. Grind in salt and pepper to taste.

Cover the pan and simmer for about half an hour over a low to moderate heat until the chicken is cooked through.
