Ingredients

1 lb skinless boneless chicken breasts
Salt and black pepper, to taste
1 teaspoon paprika
1 red onion
1/2 lb pineapple
1/2 yellow bell pepper
1/2 red bell pepper
1/2 zucchini
For the marinade:
1 teaspoon minced chipotle chilies in adobo sauce and 2 teaspoons juice from the can
2 tablespoons raw honey
2 minced garlic cloves
1/4 cup olive oil
Juice and zest of two limes

Grilled Chicken and Vegetable Shish Kabobs

As grilling season is here, everyone wants to find tasty new recipes which work well on the barbecue.

This recipe is so easy to make and we are using chicken and vegetables to make these yummy, colorful kabobs.

The chicken is marinated in a chili, honey, garlic and lime marinade before you assemble the kabobs, so you can expect plenty of flavor in every bite.

You can use metal or wooden skewers to make the kabobs but it’s important to soak wooden ones in water for half an hour before using them else they might ignite on the grill.

If you are going to use wooden skewers, soak them in cold water for half an hour first.

Whisk the chipotle chilies and adobe sauce, honey, garlic, olive oil and lime juice and zest together to make your marinade.

Chop the chicken into 1-inch pieces and season then with salt, pepper and paprika.

Put the chicken in a bowl and pour over about half of the marinade, then toss to coat and marinate for half an hour in the refrigerator.

Chop the pineapple and vegetables.

Preheat the grill to medium heat.

Thread the chicken, vegetables and pineapple on to skewers

Grill for 12 minutes or until the chicken is cooked

As the kabobs are cooking, turn them a few times, using the reserved marinade to baste them as they cook.
